Goi ngo sen is a fabulous Vietnamese salad. Bags of crunchy fresh lotus, limey zap and a jolt of when-in-Vietnam-do-as-the-Vietnamese-do, fish sauce, chilli filled to boot. The carnivorous angle to this healthmungussly good lotus root, peanut, onion and herb salad comes from wee shrimp and strips of shredded pork. It’s a snitch to make. You don’t really need the greasy prawn crackers that accompany it. To my mind a good stiff leaf would do just as well, but that’s just not done. Pretty as a picture and twice as nice to shovel down your greedy little foodpipe. This specimen was located at 46A Dinh Cong Trang street in District 1, Saigon and cost 40,000VD, £1.43 or naff all.
